The winemakers' care in producing this fabulous, bold wine is evident in each sip. Topel winery is on Duncan Peak in Hopland in Mendocino County (north of Alexander Valley) at an elevation of 1,200 feet. With production topping out at just over 400 cases of Cabernet, Topel's handcrafted style results from hand harvesting; they sometimes pick a single vineyard 3-4 times over to ensure ripe, intense fruit. This wine underwent whole-berry fermentation and the 2000 was aged in French oak barrels for two years before it was bottled -- unfined and unfiltered -- and aged in the bottle for an additional six months before release. All of this care and diligence has produced a wine with brilliance, definition, and impeccable balance.
